WEEKNIGHT TACO SALAD
I honestly don’t think I could trust a person who doesn’t love tacos LOL we eat tacos and/or taco salad constantly - it’s just so easy to throw together and the leftover taco meat never disappoints either.
This past year while we were planning the wedding and trying to eat super clean, we basically ended up eating some form of lean meat with veggies or a side salad for every.single.meal. As I’ve said before, I LOVE salad so this wasn’t necessarily difficult for me. We also didn’t try that hard to “lose weight”, we just paid attention to sugar and carbs, and that’s really all it took to drop a couple lingering pounds.
Now I know ground beef isn’t typically the healthiest or leanest of options OBVIOUSLY. And yes, 80/20 is seriously greasy and always more delicious, but you can still get yummy/relatively healthier tacos out of 93/7 meat which is better than nothin’! Skip the cheese and you’re in better shape, too. (no pun intended)
Aside from being tasty, this meal only takes about 25-30 minutes to throw together and the flavor is awesome! And if you or your man don’t love salad, you could always toss the meat into a couple small corn tortillas and top with the cheese, tomatoes, and avocado for a true Taco Tuesday.
